Ingredients

  • 1 cup Arborio rice: Releases starch for a creamy texture.
  • 8 oz 225 g cremini or button mushrooms: Slice evenly so they cook at the same rate.
  • 2 tablespoons unsalted butter: Adds richness. If using salted butter adjust the salt.
  • 1 tablespoon olive oil: Keeps the butter from browning too quickly.
  • 1 small shallot finely chopped: Adds mild sweetness. Substitute ¼ small yellow onion.
  • 2 cloves garlic minced: Adds savory aroma.
  • ¼ cup 60 ml dry white wine: Adds brightness. Substitute warm broth if you prefer.
  • 3 to 3½ cups 720 to 840 ml vegetable or chicken broth: Keep warm so the rice cooks evenly.
  • ⅓ cup 30 g freshly grated Parmesan cheese: Adds salty, nutty flavor and creaminess.
  • 1 teaspoon fresh thyme leaves: Complements the mushrooms. Use ½ teaspoon dried if needed.
  • Salt and freshly ground black pepper to taste: Season gradually, since the broth and Parmesan are already salty.
  • 1 tablespoon chopped fresh parsley: Adds a fresh finish.

Equipment

  • Medium saucepan for warming the broth
  • Large skillet or sauté pan
  • Wooden spoon or silicone spatula
  • Chef's knife and cutting board
  • Measuring cups and spoons

  3. Cook the Shallot and Garlic: Melt the remaining 1 tablespoon butter in the same skillet. Add chopped shallot and cook until soft, then stir in minced garlic.
  4. Toast the Arborio Rice: Add Arborio rice to the skillet with the shallot and garlic. Stir for 1–2 minutes until the grains are coated in butter and slightly translucent around the edges.
