Wash the strawberries gently under cool running water. Pat them thoroughly dry with paper towels, then let them air-dry until no moisture remains. Keep the green leaves attached so the strawberries are easier to handle while dipping.
Line a baking sheet or large tray with parchment paper. Make sure there is enough space to arrange the dipped strawberries without them touching.
Place the semi-sweet chocolate in a microwave-safe bowl. Microwave in 20-second intervals, stirring between each interval until the chocolate is smooth. If using coconut oil, stir it in once the chocolate is nearly melted.
Alternatively, place the chocolate in a heatproof bowl over a saucepan of gently simmering water. Stir until melted and smooth, making sure the bottom of the bowl does not touch the water.
Hold each strawberry by its green leaves and dip it into the melted chocolate, turning it gently to coat most of the berry. Let the excess chocolate drip back into the bowl before placing the strawberry on the prepared tray.
If desired, melt the white chocolate in a separate bowl using short microwave intervals. Drizzle it over the dipped strawberries with a spoon. You can also add sprinkles or finely chopped nuts while the chocolate coating is still wet.
Arrange the strawberries on the parchment-lined tray and let them sit at cool room temperature until the chocolate coating has firmed up, about 30 minutes. If your kitchen is warm, refrigerate them briefly until set.
Transfer the chocolate-covered strawberries to a serving plate and enjoy them once the coating has set. For the best texture and appearance, serve them the same day they are made.
